Apple Cranberry Muffins























Ingredients
cup diced fresh cranberries
1
teaspoon grated orange peel
1� cups all-purpose flour
teaspoon baking soda
1
pinch of salt
teaspoon baking powder
1
medium egg beaten lightly
cup caster (fine) sugar
cup fresh skim milk
cup canola oil
1
teaspoon ground cinnamon
1
cup peeled and shredded
cooking grade apples
cup cranberry sauce

Instructions
Preheat oven to 375. Mix the cranberry sauce and orange peel in small bowl.
Using another bowl, mix together the flour, sugar, cinnamon, baking soda,
baking powder and salt.
Beat the egg, milk and oil, and mix together with the dry ingredients.
Add in the apples and fresh cranberries, and mix together gently.
Line a 12 hole muffin baking tray with paper muffin cups, half fill each cup with
the mixture, make a small well (indentation) in each and fill-each-with 1 1/2
teaspoon's of the cranberry sauce.
Bake for 20 minutes, use a skewer or tooth pick to check if cooked, when cooked
take out the oven and allow to cool down on a wire rack. Makes 12 muffins.
Low in calories; 100 g of fresh fruit slices provide only
50 calories. They, contain no saturated fats or cholesterol.
The fruit is rich in dietary fiber, which helps prevent absorp-
tion of dietary-LDL or bad cholesterol in the gut. The fiber
also saves the colon mucous membrane from exposure to
toxic substances by binding to cancer-causing chemicals
inside the colon.
Rich in antioxidant phyto-nutrients flavonoids and
polyphenolics. The total measured anti-oxidant strength
(ORAC value) of 100 g apple is 5900 TE. Some of the im-
portant flavonoids in apples are quercetin, epicatechin, and
procyanidin B2. Additionally, they are also good in tartaric
acid. Altogether, these compounds help the body protect
from deleterious effects of free radicals.
Contains vitamin-C and beta-carotene. Consumption of
foods rich in vitamin C helps the body develop resistance
against infectious agents and expunge inflammatory free
radicals.
A good source of B-complex vitamins. Together, these
vitamins help as co-factors for enzymes in metabolism as
well as in various synthetic functions inside the body.
Carry small amounts of minerals like potassium, phosphorus,
and calcium. Potassium which helps control heart rate and
blood pressure.
