HEALTHY HOME COOKING
Tuna & Egg Kedgeree
Ingredients
1
tbsp olive oil or vegetable oil
stick of softened butter
1
tsp ground turmeric
1
tsp cumin seeds
1 � cups basmati rice, rinsed
2 � cups vegetable stock, hot
� cup frozen peas
� cup frozen sweet corn kernels
red pepper diced
sliced medium onion red
or yellow
� cup flaked almonds, toasted
1
12 oz can tuna, drained and
flaked
4
medium eggs, boiled hard
peeled and quartered
Per serving: 691 cals, 25.9g fat (5.7g saturated), 39.5g protein, 67.4g carbs, 4.5g sugar, 1.3g salt
Serves 4 people
Instructions
Heat the oil and half the butter in a large frying pan, then add the dried spices and fry for a couple of minutes.
Stir in the already boiled rice, then pour your stock onto it. Bring to a gentle boil, then simmer for 15 minutes.
Next add all the vegetables, and flaked almonds. Cover and cook for 6 minutes more over a gentle heat until all stock
has been absorbed; careful don't allow it to burn.
When ready season it well, and add your remaining butter and drained tinned tuna. place the eggs on top.
Salt and pepper to taste.

t the age of 18, Michael graduated catering college
as a certified chef.
He got a 2nd chef position at a
world-renowned hotel and prepared food for David Bowie,
Dame Judy Dench, John Wayne, the Hollies and other
celebrities.
At age 20, Michael landed a head chef job at
another great hotel. He was living his dream,
when tragedy struck.
Michael was the passenger in a car that was
struck by another car going 90 mph. His seat
belt snapped on impact and he was thrown
through the windshield. The car that hit him
bulldozed the car he was in, coming to rest over
his neck, head and chest. He was trapped for over
an hour and was nearly left for dead.
As he lay trapped under the car, he saw a bright
light. He felt himself being lifted toward the light. Just as
he felt he was about to die and enter into a peaceful place
with no pain, he awoke in the hospital.
Michael sustained 5 broken ribs and a fractured skull. His
right leg was almost severed off while wrapped around the
back axle of the car. He was in the hospital for three months
and was told he would never walk again, but he did!
With there being no MRI machines in the 70's, the damage to
the back part of his brain went unnoticed. For the next 22
years, Michael suffered many medical problems that
could not be explained. Finally, at 42 he underwent
a brain scan and was diagnosed with a rare brain
disorder called Arnold-Chiari malformation. The
impact had made a small part of his brain start
a downward movement to his brain stem, ap-
proximately a centimeter a year.
Still struggling with his injuries, Michael's main
aim in life is to motivate people who are battling
physical and mental recovery. At the age of 53, Mi-
chael took up writing and has since published two
books. The first Proper Cornish Childhood is about his life
before the accident. His second book Life on Prescription
