Ham & Chicken
Mixed Vegetable Jambalaya
Instructions:
Take a saucepan and place your ham
in it with the parsley, chives, basil and
dried thyme. Pour in just enough water
to cover these ingredients and cook for
around 8 minutes on medium heat.

Add the oil and the chicken stock, then
the chicken and black pepper, and boil
on medium heat for 5 minutes.
Add the onion, garlic, red bell pepper,
celery, peas, sweet-corn and uncooked
rice.
Cook on medium heat for about 5 min-
utes, until soft.
Turn the heat to low and allow to cook
for 18 more minutes, adding a little extra
water if required. Do not allow to boil dry.
Serve.

cup garden peas
� lb very lean ham, cut
into bite-sized strips
cup kernels sweet corn

cubes vegetable stock,
dissolved in a little water

lb. boneless, skinless chicken
breasts, with any fat cut away,
cut into bite-sized chunks
(diced)

white rice

Tbsp. olive oil or vegetable oil

Tbsp freshly chopped chives

medium red onion, about one
cup, cut into 1/2-inch pieces

Tbsp freshly chopped basil
2
stalks fresh celery, about
1 cup, cut into 1/2-inch pieces
tsp. dried thyme
1
large red bell pepper, about one
cup, cut into 1/4 inch pieces
2
cloves garlic, peeled and finely
chopped
