Apricot Sage















Instructions:
Preheat the oven to 400 degrees F and
grease a baking tray.

Combine flour, salt, pepper, butter, cheese
and dried sage in a medium bowl. Mix well
Add water and mix until dough is firm.
Place dough in a bowl, cover with plastic wrap
and chill in refridgerator 20 to 30 minutes.
Place sausage meat in a separate large bowl.
Add the apple, apricots and sage, and season
with salt and pepper. Mix well.
Once dough has chilled, roll it out on a floured work surface approximately 4 x 12".
Wet one edge of pastry along one edge with cold water.
With floured hands roll sausage mixture into logs and place evenly in pastry. Now
fold over the pastry and run your fingers along the side to finish seal.
Cut sausage rolls into even pieces.
Transfer rolls to baking sheet. Score tops of pastries and glaze with the beaten
egg. Bake for 20 to 25 minutes until golden brown. Cool slightly and serve.

1 � cups strong bread flour

cup grated cheddar cheese
1
teaspoon dried or
fresh sage
1 � sticks of butter
enough cold water to
make a firm dough
1
egg beaten for glazing rolls
salt and pepper to taste
Filling Ingredients:
16 ounces pork sausage meat
1
medium apple (peeled,
cored & finely diced)
6
medium pitted & diced
apricots fresh or canned
4
teaspoons dried or
fresh sage
salt and pepper to taste
