HEALTHY HOME COOKING
Cheese and Vegetable Omelette
Instructions:
Preheat the oven to 350 degrees.
Gently whisk eggs for 2 minutes in a
large bowl, then stir in the whole-wheat
flour and black pepper.
Coat the bottom and sides of a heavy,
oven-proof baking dish with a quarter
of the oil.
Using the remainder of the oil, cook
the onion in a frying pan until it starts
to soften, then add the spinach, bell
pepper and mushrooms and cook for
3 more minutes, stirring constantly.
Add the water, garlic, basil, thyme,
chives, parsley, peas and sweet corn.
Cook for 1 minute, stirring constantly .
Put the vegetables in the oven-proof
baking dish, then add the egg mixture
and stir to combine.
Bake on the top rack of the oven for 5
minutes, until the egg mixture is partly
cooked, then sprinkle the cheese on
top. Continue cooking until cheese has
browned.
Ingredients:
� cup boiled /cooked
garden peas
1 medium red onion, diced
(about 1 cup)
1 cup fresh or frozen spinach,
cut into �-inch pieces
6 medium eggs
� cup cooked sweet corn
kernels
1 cup diced red bell pepper
1 Tbsp of freshly chopped
parsley
2 cups fresh mushrooms,
chopped into �-inch pieces
1 Tbsp chopped chives
� tsp fresh thyme
cup grated low-fat
mozzarella cheese
2 Tbsp whole-wheat flour
2 tsp olive or vegetable oil
2 Tbsp fresh basil leaves,
finely chopped
1 tsp black pepper
1 clove garlic, finely chopped
5 Tbsp of water

obedience to Your Word.
We are desperate for Your tender

Forgive us, and in the power of Your
great love, lift us up to live in
Your righteousness.
We pray for our beloved nation. May
we repent and return to You and be
a light to the nations. And we pray
for our leaders and ask that You give
them wisdom and faith to follow You.
Preserve and protect us, for You are
our refuge and only hope.
Deliver us from all fears except the
fear of You, and may we courageously
stand in the truth that sets us free.
We pray with expectant faith
and grateful hearts.
