Zucchini Walnut Muffins
Ingredients

cup all purpose flour

cup whole wheat pastry flour
teaspoon cinnamon
teaspoon ground nutmeg
1 � teaspoon baking powder
teaspoon baking soda

cup sugar

tablespoons canola oil

tablespoons butter, melted
� cup lowfat milk

cup zucchini, shredded
cup walnuts

Zucchini, a small summer squash, is botanically a fruit but on gastronomic
terms, it is treated as a vegetable. One medium-sized zucchini has just
25 calories, making it an ideal stomach-filler. You can avail zucchini
throughout the year, but the best ones appear during late spring.

Instructions
Spray twelve 3-inch muffin cups with nonstick spray,
or line with paper liners. Preheat oven to 400 degrees.
In large bowl, combine both flours, cinnamon, nutmeg,
baking powder, baking soda, and salt.
Add the liquid ingredients to the flour mixture and stir
until just combined. Fold in shredded zucchini and nuts.
Cool muffins in the pan for 5 minutes, then remove
from pan and cool on wire rack. Makes 12 muffins

Health Benefits of Zucchini:
Zucchini contains vitamin C, a powerful anti-
oxidant, and has anti-inflammatory properties.

blood clot formation and possibly Alzheimer's
disease). It also prevents the risk of having mul-

water content and are a good diet food. It is
high in folate, potassium, vitamin A and lutein
